WHY I STARTED A BLOG (FT. COMPLETELY UNRELATED PIC OF ME AT THE BEACH)

First Year of University dinner: large bowl of spaghetti (not wholemeal) with chopped up pepperami and a mountain of butter.


NOW - studying a Masters in Nutrition at Leeds University dinner: stir-fried carrot, aubergine and spinach, courgette, courgetti and salmon.

​

Both take around the same time to prepare but how your body feels after eating each dish is what really made me change my habits and embrace a healthier/fresher diet change. 

​

If you're anything like me you have a busy lifestyle and don't have the time or patience to wait hours for my dinner to cook. Thus all the recipes in this blog take no more than 30 minutes (in fact most take around 15).


I am no chef (despite the name) but am currently studying a masters in Nutrition at the University of Leeds. Thus, by September 2019 I will be a fully accredited nutritionist. I am not sure yet which path within nutrition my future will lead to but for the time being I wanted to create this blog to share my foodie knowledge and recipes.


Over the years, as my interest in food and health has increased I have inspired those around me to seek out healthier food choices and they themselves have reported a fresher/ more energized persona after - I hope this blog has inspired you to try it too.

I am totally against having set out meal times, my mum calls me a 'grazer' - snacking through the day - but so long as those snacks are healthy choices (nuts/ veg/ small wholegrain sandwiches/ porridge) then it stops you feeling hungry and being tempted to make those unhealthy food choices.


But I must also stress that it is important that you TREAT YOURSELF- I never want you to turn that piece of double chocolate fudge cake at a birthday party because a) 1 piece of cake will not ruin your healthy eating routine 2) it may motivate you to work that little bit harder in the gym 3) life is too short to turn down cake.

After an unhealthy meal I feel sluggish and unmotivated but eating healthily gives me a 'glow' - it sounds ridiculous but I do believe that food is a medicine which many neglect on a daily basis. Change your eating habits, change your life


That was a bit over dramatic but seriously - I DARE you to eat healthy all day (aka select 3/4 #chefjodie recipes) (large quantities are 100% allowed) and see how your body feels compared to a day of making unhealthier choices.
